Amakusa has a practical form using the head and bones left after sashimi, while Mamihara in Yamato preserves the grand wedding form with a whole fish and noodles arranged like white waves. The paired fish and long noodles expressed hopes for a lasting marriage and ties between two families. Just before serving, ample fish braising liquid is spooned over the noodles so they absorb its savory flavor without sitting long enough to become soft.
