About this dish

The pods are washed and dried whole before slicing, and the slime on the cut faces is left alone rather than rinsed off again. They come to the table plain, without a dipping sauce.

Wash and dry the whole okra pods, trim the stems and cut into pieces about 1.3 cm thick.

Beat the egg, milk and half the seasoned salt.
In a separate bowl, mix flour, cornmeal and the remaining seasoned salt.

Heat the oil to 182°C in a deep pan, keeping the oil below halfway up the sides.
Adjust the quantity to the pan size.

Coat a small batch in egg mixture, let excess drip away, then coat in the flour mixture.
Shake off loose flour and fry until deeply golden. Drain and repeat with the remaining okra.
