About this dish

Matzo, the unleavened flatbread, is moistened briefly, broken up and cooked with eggs in a buttered pan.

Rather than a thick slice soaked in custard as with French toast, you get small pieces of matzo with soft egg clinging between them, and this version is savory, with no sugar or syrup. It calls for plain matzo, not salted snack crackers, wetted only until it bends enough to snap without falling apart in the water.

Instructions

4 steps
  1. 1

Beat eggs with milk, salt and pepper until no streaks of white remain.

  2. 2

Hold matzo under warm running water for 20-60 seconds until slightly flexible.

Shake off water and break into 2-3 cm pieces, without soaking until mushy.

  3. 3

Melt butter in a wide skillet over medium heat and toss the matzo for 1 minute to coat.

  4. 4

Pour in eggs and cook 2-3 minutes, gently sweeping the spatula across the bottom.

Plate immediately when soft clusters form and no liquid egg remains.

Tips

Reduce to medium-low if eggs brown quickly; do not overcook them just to crisp the matzo.
