Korean White Kimchi (Non-Spicy Napa Pear Fermented)

With no gochugaru at all, this white kimchi is mild, and its clear brine is eaten along with the cabbage. Pear, radish, garlic and ginger carry the flavor instead, and the pear adds sweetness while softening the fermented smell. The filling is tossed lightly with fingertips, because rough handling bruises the radish and pear strips, and everything is drained well to keep the brine from clouding. After half a day at room temperature it ferments slowly in the fridge for 2 to 3 weeks, until the liquid tastes clean, cool and gently sour, a good foil for fatty meat.

Dakgalbi Cream Rigatoni (Korean Spicy Chicken Gochujang Cream Pasta)

Dakgalbi Cream Rigatoni (Korean Spicy Chicken Gochujang Cream Pasta)

Chicken thighs marinated in gochujang, chili flakes, and soy sauce are stir-fried with cabbage and onion like dakgalbi, Korea's spicy chicken stir-fry, then simmered in cream into a pink, gently spicy sauce. The cabbage and onion hit the pan before the chicken to draw out their sweetness. Thigh meat is used because it suits the cream sauce. Sauce fills the thick rigatoni tubes and gives each bite both heat and richness. Mozzarella melted in at the end stretches like the cheese on cheese dakgalbi. The final seasoning waits until the sauce is done because gochujang brands differ in saltiness.

Korean Melon Cucumber Perilla Salad

Crisp, honey-sweet chamoe (yellow Korean melon) and cucumber make a cold summer salad dressed with ground perilla seeds. The perilla powder thickens the lemon dressing and gives it a nutty, almost toasty depth, a flavor Koreans know from perilla noodle soups. Shredded perilla leaves go in last for a second, fresher layer of the same plant, and the melon tastes sweeter the colder it is.

Korean Clam and Radish Pot Rice

Korean Clam and Radish Pot Rice

Clam meat, julienned radish and shiitake cook on top of rice in kombu water, and the finished pot gets mixed with a soy, sesame oil and scallion sauce at the table. The radish steams over the rice and sweetens it, and cutting it thin (0.3 cm) lets it finish at the same time as the rice. The soaked rice has to drain well, since the kombu water is measured for rice without surface water. The clams go on only near the end so they stay plump.
